Easy Energy Balls in the Food Processor

These easy cookie like balls are delicious and healthy.  Grab a couple when you are rushing out the door and missed breakfast.  Take some for an afternoon snack.  Replace your sugary treats with one of these dessert-like balls and stay on your healthy eating plan.

I make these in my food processor so it is super fast and easy clean up.


  • 1 1/2 C Rolled Oats
  • 2 TBL Chia Seeds or Flax Seeds
  • 1/3 C Organic Maple Syrup
  • 1/2 C Organic Peanut Butter (peanuts only in the ingredients)
  • 1 tsp Vanilla Extract
  • 1/4 tsp Himalayan Salt
  • 1/2 C Lily’s Chocolate Chips (I like dark chocolate)

Add all of it except the chocolate chips to your processor.

Energy Balls

Pulse until blended.  Then scrap down the sides and pulse again until blended.  Add your Chocolate Chips and pulse again.  Scrap down sides again if needed.

This is what you should end up with.

I use a cookie scoop to make my life easier.  Scoop dough, form ball and place in dish.

Once you have formed all your Energy Balls place dish into the fridge or freezer.  Take out a couple when you are hungry or need a sweet treat.  Kids love these.  Just don’t tell them it’s healthy.

Essential Oil Infused Elderberry Syrup in the InstantPot

Elderberry Syrup is an old standby for illness.  I grew up with it as many of you did.  Nowadays you can buy it right at the store.  However you are getting a bit more than you bargain for.  They are loaded with sugar and other stuff that I cannot even pronounce.  To top it off it is not cheap.  I mean it is super expensive.  The markup is incredibly high.  You will see for yourself when you take a look at how easy and simple this is to make.

Let’s talk Elderberries.  Did you know that they are highly astringent.  Which means eating them raw can make you super sick.  They are a good source for vitamins A, B & C but you need to cook them first to neutralize their anti-nutrients.   They date back to biblical times.  And there is and Elderberry Tree planted in front of the West Minster Abbey to ward for good luck and to ward off disease.  Kinda cool.

So this is how easy it is to make your own.


  • 3 1/2 C Water
  • 2/3 C Dried Organic Elderberries
  • 1 C Raw Local Honey
  • 2 drops each doTerra’s Wild Orange, Clove, Cinnamon Bark, OnGuard and Ginger Essential Oils https://doterra.me/OtVSYD8F


  1. Add the water and berries to the InstantPot.
  2. Set on High Pressure for 9 minutes, NPR
  3. In a small bowl add the honey and the essential oil, stir & set aside.
  4. When InstantPot is done and pressure has released (approx L17) carefully remove lid and strain the berries from the liquid.  We are using both products.
  5. After Liquid has cooled for about 5 minutes slowly add the honey mixture and stir.
  6. Pour into Jar and place in fridge once completely cooled.

Servings:  1 Tbl Adults per day, and 1 tsp for Children over 1 years per day.

BONUS  Elderberry Jam  RECIPE!!!

Now…What to do with those left over cooked berries.

  1. In a small bowl add cooked berries.
  2. add 1/2 C Raw Honey
  3. add 4-5 drops of doTerra’s Wild Orange Essential Oil
  4. Mix until Blended.  Scoop into a glass Jar and top with lid.  Store in fridge.

Bone Broth in the InstantPot

Pressure Cookers are all the rage at least in my life. Cooking for 4 hungry mouths can take up a lot of time leaving me very little time to do anything else. I have had been a big fan for over a decade. My first was the Wolfgang Puck electric one that I was given as a gift. I loved it so much until a few years ago I found out about the Instantpot. Guess what…it is even nicer than the one I had. So when it was time to replace mine I jumped at getting this new and improved Instantpot. This is one recipe that proves how invaluable this small kitchen appliance is.

You may have heard how healthy Bone Broth is for you and your gut health. So have I. I make broth all the time from veggie scraps that I keep in my freezer and decided to give Bone Broth a go.

Recipe: 2 Raw Organic Beef Shank Bones, 3 Carrots cut into 3rds, 1 medium onion cut into 4ths, 2 Celery Stalks cut in half, a clove of garlic and S & P to taste. Toss everything in your pot and top with water. Set on High Pressure for 1 hr 45 min NPR. After your broth has been refrigerated it should have a gelatin consistency.

Recipe Variations: You can use different meat bones like chicken or Turkey also. If you have veggie scraps you can use them instead of adding veggies. Veggie Scraps are just leftovers. Like when you are using an onion and chop off the ends. The ends go into my freezer bag of veggie scraps. You can use just the scraps for veggie broth or add them to your bone broth.


Here are some ways to use your Healthy Homemade Bone Broth? You can drink or sip it like a hot tea. You can use it as a base for soup or stews, or you can use it as a base for your gravy and sauces. I like to freeze some of mine for later use. If you read the labels on the store bought broth it has lots of added ingredients. When you make your own you know exactly what is in it. And just look at the dark rich color of the homemade.


Winter ICK and Natural Solutions

Everywhere we turn some is hacking, coughing, or blowing their nose.  With so many people sick and all the stories of how truly bad it has effected others is enough to scare even the most holistic and crunchiest of us to stock up on over-the-counter remedies, right?  Nope, not this girl.  I turn to my arsenal of oils and do what has worked for my family for years.  We use OnGuard Touch Roller twice a day, everyday by applying it topically one our spine & bottom of our feet.

Then… my daughter came home from school and said her throat was irratated ~ Ugh!  That’s when I look to my oils to the next level.  Yes….FLOOM!  FLOOM is a blend of essential oils that we use when the ICK has entered the house.  Frankincense, Lemon, Oregano, OnGuard, and Melaleuca all in a roller bottle topped off with FCO (Fractinated Coconut Oil).  Same application as before but we then do it 3-4 times a day.

Daughter number 2 wakes up Saturday morning with crazy head tension.  This is very unusually for her.  She came right to me and asked for what oil to use.  I handed her the Frankincense Touch Roller.  I had her apply it directly to her forehead near her hair line.  She went and layed down on the couch and moments later was right as rain.

A week went by and I am so grateful we are all healthy as horses.

Two days ago I woke up with crazy sinus pressure on the right side of my nose.  I have dealt with seasonal threats for years so I wondered what could be the cause as it is still winter.  My best guess is all the construction on my street.  They have been doing lots of digging and moving dirt.  I applied melaleuca directly to my sinus area but away from my eye.  I had to do that for 2 days.  It never got worse and is all gone today.  It amazes me how effective high quality natural solutions are.

I was on over-the-counter solutions for 10 years for seasonal threats.  Which is crazy enough because I was raised on a farm and never had any season threats until I moved to the western part of the state, only 4 hours from my hometown.  I had to take a tiny white tablet everyday or I was a hot mess.  Runny nose, weepy itchy eyes, and who knows what draining down my throat ~ ew!  I remember buying my seasonal threats solutions from the local ‘three letter’ drug store but only when they were on sale.  Making sure I got the packs that had the extras in the pack.  I did rain checks and stacked them with coupons so I they would be more affordable.  The time & energy I wasted as I think back is enough to make me nuts.

Why is there garbage in my Coco Butter?

Once I started reading labels on products I began to feel like Alice going down the rabbit hole.  There are only so many googles a person can do so I found resources that I can turn to.  One is the Environmental Working Group (EWG.org).  This is what came up on my favorite lotion.  The lotion I have used for years on myself & my kids.

The crazy part to me is whyWhy add ingredients that are harmful?  It is so frustrating to think you are doing the best for your family only to find out that you are harming them.

So let’s cut to the chase.  I decided to make my own coco butter lotion.  And it turns out that it is super easy.  Start to finish probably 30 min and most of that was when it was cooling in the fridge.


Use or create a double boiler.  I use a large pasta pot and a glass Pyrex bowl.  Add water to the large pot and the coco butter in the glass bowl.  On medium to low heat slowly melt the coco butter.  Wait until the coco butter is mostly melted and add the coconut oil.  Once that is mostly melted add the Avocado and remove from the heat.  Let the remaining heat melt the rest of the oil.  Let sit to cool for several minutes.  Add the essential oils and stir.  Place in the refrigerator until the mixture cools enough to begin to solidifies.  Use a hand mixer to whip the still liquid lotion.  See pic A.  Then let rest for just a couple minutes and whip again.  See pic B.   After it whips up into a thick firm icing-like texture put in container of your choice.  I found these cute little Mini Deodorant twist up containers.  See pic C.  They work great!  I filled 15 of those little guys and still had enough for to fill a small glass jar.

Just a heads up, this entire process smells amazing!   You can use whatever essential oils you prefer.  I chose Frankincense & Myrrh because of the amazing benefits they offer my skin.

Bye Bye Candles…Hello Diffuser!

I am a recovering Yankee Candle addict.  I burned candles all the time.  From the minute I woke up until I went to bed.  Even forgot about them and left the house.  Thank God I never burned the house down.

So how does an avid candle user stop?  Oils & Education.  I love my essential oils for their support of our health & emotions.  And I love them for their yummy smells.  You can support your health, clean the air, and uplift your mood all with diffusing oils.   But the kicker was the education.  Learning how toxic candles are to our health is what made the switch so easy.  I would never intentionally harm my families health.  And for years of burning candles that is exactly what I was doing.  Polluting our home with chemicals and who know what else.  When we know better we do better, right?

Did I mention it is cheaper?  A bottle of Lemon doTERRA Essential Oil is $10 wholesale.  There are over 250 drops in the 15ml bottle.  I only use 2 drops in my Petal diffuser that runs from 4 hours.  That is only 8 cents.  Pretty awesome!

Here are my favorite diffusers.  Both have on/off light options and shut off automatically when they run out of water.  So no worries with burning down the house like with candles.  The Petal is much more pleasing to the eye.  But I have & use both.
