Cheesy Scalloped Potatoes with Kale

Have ya heard?  Kale is a super-food.  But…..I hate the taste of Kale!

Here is my wfpb – recipe for delicious Cheesy Scalloped Potatoes with Super-Food Kale.

Take a 1/2 a bag of Kale (I use Trader Joe’s Organic) and fill up your food processor.


And what pulse until it is in bits but stop before you end up with pesto.


Place your Kale flakes in a bowl and set aside.

Next change your attachment to the slicer.  Slice 2 large yellow onions.   Place sliced onions in a bowl and set aside.

Now slice the potatoes.  Place in a bowl and set aside.

This is my set up for assembling:


Get your favorite Cheesy Sauce (see ingredients) and get started.
1st we add a little cheesy sauce to the bottom of the dish.  Your first layer are the potatoes, then the onions, topped with a sprinkle the kale flakes.  Then add salt & pepper (optional).


Repeat for the second and third layers. Top the third layer with some cheesy sauce.  Your final layer is just potatoes topped with the rest of the cheesy sauce.  Add Salt & Pepper (optional).


Cover with foil and bake for 1 hour & 15 minutes.  Take off foil and brown top for another 5 minutes (optional).  Enjoy!


  • 2.5 lbs Yukon Potatoes
  • 6 Cups Kale = 1/2 bag of Trader Joe’s 10 oz Organic Tuscan Kale Cut & Washed
  • 2 Large Yellow Onions
  • 1 quart Cheesy Sauce (CFDG Cheesy Sauce)
  • Salt & Pepper to taste (optional)
